O'Grelo has become a point of reference for Galician cuisine in Madrid, both for the product's quality and the tradition of the recipes. 30 years later, the second generation remains faithful to this idea "of being the reference point of Galician cuisine in Madrid" but adapting the concept to new times and gastronomic trends since innovation and tradition form an inseparable tandem. Some traditions remain unchanged over time, such as going daily to choose the product to ensure that the product served is always of the highest quality and represents the Galician land market. Of all the specialities, there is undoubtedly one type of product for which Ogrelo stands out: the variety of seasonal shellfish, i.e. mussels or lobsters.
