A few steps from the center of Madrid, the Sandoval brothers present you with a culinary voyage that is far from conventional. Mario, Coque’s chef, experiments with innovative techniques such as the hydrolysis of an egg, the study of vegetable DNA and the extraction of polyphenols from wine.
